I was thinking today what would be a really easy way for someone who was intimidated by cooking or simply didn't have much time to make a really tasty main course dish. I thought about different blends of spices until I came up with the following. It is very good.

2 to 3 pound chuck roast.
16 oz jar of Pace Picante sauce. It comes in mild, medium, and hot. I used medium.

Take a knife and poke lots of holes into the beef to let the flavors enter the roast. Place in slow cooker or covered pan on stove.

Pour the jar of picante sauce over the beef.

Set slow cooker on high and simmer for several hours till fork tender.
If using a pan on the stove, set to a fast simmer (low to medium low) and cook till fork tender.

Serve as you would pot roast or pull apart using two forks, add some of the cooked sauce and serve on hogie rolls or open face sandwiches.

I added about half a cup water to keep the sauce from drying out but when it was done, this addition did not appear necessary.

I have a big chunk of good pepper jack ... that goes on tomorrow. Today I had the straight meat/sauce to check the flavor. Tomorrow is the Philly Steak version. I may even saute some onions!
