Joe's Spicy Pozole

(I'm Joe) I have made this many times and each time it comes out a little different. I seldom measure anything.

Buy a pork roast or a pork butt (they are pretty big) or wait til pork chops are on sale and get a big package cheap.

Cut up the pork meat into chunks. Any size works but 1" to 1/2" is a good size. Throw the fat and bone away. Brown in skillet in a little butter then dump into crock pot with enough chicken broth to cover (usually 2 cans)

Put about a teaspoon of cajun seasoning in the crock pot. Less if you don't want it too spicy. More if you wish but read further.

Add one 4oz can of diced green chili peppers for flavor.

Add one tablespoon chopped crushed garlic

Add 1/2 cup diced onions

Add 2 tablespoons of chili powder.

Add 2 14oz cans of white hominy using liquid also if you need it.

Add big grind of black pepper.

***Brain DAmAge AleRt*** Add one 2oz can of chilpolte peppers pureed or chopped finely. If you are a real man add a 4oz can. These peppers are hot.

Cook for several hours until meat falls apart or is very tender, stirring occasionally. Four hours on high usually works fine. Serve with raw onion, sliced ripe avocado, and fresh lime juice.

Chicken Noodle Soup

2 1/2 to 3 1/2 pounds chicken pieces
4 cups water
4 cups chicken broth
1 teaspoon seasoned salt
1 teaspoon salt, or to taste, depending on saltiness of broth
1/4 teaspoon pepper
1 leek or small onion chopped
1 carrot, chopped
2 stalks celery, chopped
1/4 cup parsley, chopped
1/2 teaspoon dried marjoram or basil
1 bay leaf
6 ounces noodles
Preparation:

Place all ingredients except noodles in the Crock Pot. Cover and cook on low for 5 to 6 hours. Remove chicken and bay leaf from pot; take meat from bones, dice, and return to broth, and add the noodles. Cook another hour or until noodles are done (about 1/2 hour on high). Or, cook the noodles separately and add them just before serving.

Actually, you should always cook the noodles in the soup so they will absorb the chicken broth flavor and spices.
