Topic: Easy Potato Dumplings

For 2 quarts of soup:


You need:
3 eggs
1 potato
1 1/4 cup flour (give or take)
1/4 tsp baking powder
1/8 cup of milk
& pinch of salt

First mix flour, baking powder & salt. Then in another bowl mix eggs, milk, and potato (mashed). Then combine all ingredients until mixture is thick & sticky...like dough. More flour may be needed, mixture should not be runny or dry.


Then while soup is at a high boil, add a tsp of butter to soup. Butter will then make a good film for the dumplings. Dip a spoon in soup, then spoon mixture into soup. Dipping the spoon in soup before each scoop prevents dough from sticking to the spoon.

Dumplings will rise to the surface when done. Mixture makes approx. 20 dumplings.

sounds easy enough, i will have to give it a try...i usually just cheat and use can biscuit dough, drop pieces of that in the soup...kids never know the difference!
