Topic: Jalapeno BBQ Sauce

One of the things I do usually is make my own rubs, sauces, and marinades. Here's one of my favourites.

Jalapeno BBQ Sauce

1 tbs canola oil
1 yellow onion, large, fine chop
4 jalapenos, large, fine chop
6 cloves, garlic, minced
1 tbs peppercorns, ground
1 tbs cumin, ground
1 tbs red pepper, ground
1 1/2 tbs paprika
1 tsp oregano, crushed
4 tbs Mexican chilies, ground
3 tbs mustard, ground
1 c cider vinegar
12 oz beer
28 oz ketchup
1/2 c brown sugar
1/2 c molasses
2 tbs pepper sauce
1 lime, juice
1 1/2 tbs Worcestershire sauce
1 1/2 tbs salt

Saute onions, garlic, and jalapenos until soft. Add all dry spices, continue to saute for around 3 minutes. Make sure and scrape the bottom while sauteing.

Deglaze pan with the vinegar.

Add remaining ingredients except for 1/4 cup molasses. Set aside molasses that is reserved.

Simmer over low heat for around 2 hours. After sauce cools, add reserved molasses and stir well.

SOUNDS good here is 2 more

Makes 2 cups.

1 T. garlic granular
1 jalapeño or more 4 heat seeded
1 T. onion granular
1 tsp. gr. mustard
1) 15 oz. Tomato sauce canned
1 T. Worcestershire sauce
1/2 tsp. gr. cayenne pepper
1/4 to 1/2 c. golden brown sugar packed
1 tsp. salt
1/2 c. apple cider vinegar
1 tsp. cumin powder
1/2 c. butter

In a pan add all bring to boil - simmer 10 minutes

Or

Beer BBQ Sauce
1 c. ketchup
2 Tbsps. apple cider vinegar
1 T. butter
2 garlic cloves chop or 1/2 tsp. garlic
granular
12 ozs. favorite beer or beef broth
1/2 c. brown sugar packed
1 T. crushed red pepper flakes
1 T. Worcestershire sauce
1 onion large chopped or 1.5 Tbsps.
dried minced onion
8 ozs. tomato sauce
1 T. butter
2 Tbsps. all-purpose flour

Medium pan whisk 1st ten ingredients together.
Bring to boil UNCOVERED - reduce heat to medium low - simmer 15 minutes whisking occasionally.
Using a fork mix together well 1 tablespoon butter ñ 2 tablespoons flour.
Add to sauce - whisk smooth.
Simmer an additional 5 minutes till sauce has thickened.
Pour into a jar to cool - store in the refrigerator.

Yum! I'm going to try your recipe this weekend I'm having a get together for friends, family ,friends of friends, friends of family etc etc can see slathering the beer sauce on hamburgers while on the grill , you're invited too . Oh and I'm making potato salad, coleslaw, baked beans (homemade), the works

Sugar-Free BBQ Sauce and Dry Rub

Dry Rub
1/4 cup Brown Swerve
1/4 cup smoked paprika
2 tablespoons season salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 1/2 teaspoon chili powder
1 1/2 teaspoon dried sage
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper (optional)

Sugar-Free BBQ Sauce
1/2 cup Brown Swerve
1/4 cup apple cider vinegar
1/4 cup water
1 tablespoon Worcestershire or Coconut Aminos
1 1/2 teaspoon yellow mustard
1 cup unsweetened ketchup (Westbrae or Primal Kitchen)
2 tablespoons dry rub mix (see recipe above)

Combine all ingredients in a saucepan over medium heat. Stir well. Bring to a slow boil. Once boiling, reduce heat and simmer uncovered for 30 minutes stirring occasionally as it cooks.

Note: Making a day ahead of time allows the sauce flavors to become better incorporated as it rests
