Egg Foo Young is a fusion of the omlette and Chinese ingredients/methods created in San Francisco during the Gold Rush; to make more palletable to American tastes.

Caesar Salad was created in Tijuana Mexico, Nachos in Texas.

I'm interested in fused/borrowed ingredients and methods to create new dishes.

Any more examples?
