I did them the classic way. But the hot sauce idea sounds good too! As you are getting them ready, you can sprinkle them with whatever seasonings or flavorings you want for any kind of fancy pumpkin seeds your heart desires. If you have the cheese salts for popcorn, use those to make cheddar or white cheddar seeds. Use spaghetti sauce seasonings for Italian seeds. Crumbled Nori would work for some Japanese inspired seeds.

See how easy that was! Flavoring seeds is all about looking at your spice cabinet and having fun. Dill and parmissan cheese.....

I cooked my first pumpkin seeds last night. I cooked them a tad too long though. On one side of the tray, I used garlic and salt (Michiganman's way) and on the other side I used garlic, salt and Parmesan cheese. I liked the Parmesan cheese side better.

I wouldn't have tried it if I hadn't read this thread, btw.

I didn't dry them after I rinsed them. Should I have done that?

Actually I rinsed too, I drained them in a collinder, like for spagetti, then some melted butter.
One batch with cajun seasoning, the next bacth with garlic and Parmesan cheese popcorn seasoning
Both were excellent.

I rinsed and drained in the colander but I didn't know if I should have dried them. Hmmm..melted butter. I didn't do that.

Mine might have been better if they didn't have that slight burnt taste.laugh I'm still eating them though.
