Topic: Basic leftover omelet with a KICK

Some Texas minglers are getting together for a weekend and I expect that there will be some meat leftovers from Saturday. I suggested the following dish for Sunday morning.

Here's a little suggestion for Sunday at the mini mingle meet.

Someone bring an eighteen pack of eggs, Picante sauce, and shredded cheese... and more tortillas if you need them.

Whip three eggs with about a tablespoon of picante sauce until frothy.

Pour into a small buttered or Pamed frying pan over medium heat to make an omelet.
Cover

After about a minute, when the omelet is partially cooked, add chopped BBQ (no sauce) or fajitas (about two to three tablespoons) and an equal amount of shredded cheese. A little extra chopped onion is nice for some. Some sauted jalapenos is really nice for me!
Recover.

When the eggs are almost set, flip half of the omelet over in the usual way, recover and allow to finish for about one minute.

Serve with a topping of either more picante sauce or BBQ sauce warmed.

My favorite cheeses for this dish is Blue, pepper jack, or sharp cheddar.

what about mushroom? cheese should only be pepper jack for this kind of recipe.

Last time I had this dish I had it with blue cheese and no mushrooms and it was fantastic. I usually have it with pepper jack (as I mentioned) but I have also had it many times with sharp cheddar.

The purpose of posting this recipe was the North Texas mingle meet which is going on today. I knew they had certain ingredients and were going to have leftovers so I was suggesting a way to use some of the leftovers for breakfast Sunday morning.
