some bands are mostly heavy, and will have a smooth song here and there, ie. amorphis - born from fire is good (male vocal). where as leaves eyes will go back and forth (beauty and beast). so it's hard to pick certain artists, you'll just have to hear the songs and choose from there. epica, sunterra, and newer tristania might be good to start with.

Or what I refer to as "Epic Metal".

Recently discovered this genre. Been listening to a lot of Dragonforce, Axenstar, Darkmoor, Nightwish, Dark Tranquility, & Insomnium.

Any recommendations?

Please note: No throat growling. I appreciate the musical aspect of some of these bands, but I really want to be able to understand the lyrics.

Nightwish is a Symphonic Power Metal band from Kitee, Finland.
