Does anyone have any cold recipes they can share because it is hot and who wants to eat hot food when its hot, yet alone cook them.flowerforyou

I have one for pea salad that everyone seems to love.
1 can peas, drained well
1 boiled egg per can of peas
chopped onion
and what ever kind of mayo you want, some like it creamy, some not so much.
Amounts in this recipe other then the peas and egg just go by what you like.
This was on Rachel Ray's 30 Minute Meals.

what i used to do, is cook the meals late at nite for the next day when it was hot out side, so that way you had a good meal for the next day without having to cook but just to use the micro to heat up

My girls like this when it's hot:

Chilled Tomato Soup

Ingredients:

3 cups chicken broth
6 tomatoes, chopped
1 onion, peeled and chopped
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon sugar
Combine chicken broth, tomatoes, onion, bay leaf, salt, pepper and sugar in a large pot. Bring to a boil, reduce heat and simmer, covered, for 20 minutes. Discard bay leaf. Cool slightly, then blenderize. Refrigerate until serving time. I have added crutons, 'real' crumbled bacon pieces, but my 5 year loves the Club brand of puffed multi grain crackers because they float and look like boats or treasure chests depending if "Pirates of the Caribbean" is our theme that night lol

*I agree with Queene to cook at night when it's cooler... I do alot of pasta salads and go through alot of fresh fruits and lettuce/spinache leaf salads when it's hot...

1 head of lettuce
1/2 onion chopped
1 can kidney or black beans, drained and rinsed
1 large tomato chopped
grated cheddar cheese the more the better
Mix above ingredients whenever you feel like it and seal and store in fridge for whenever you want this little cold meal.
Just before serving add
1 bag corn chips
some of your favorite salsa
A couple tablespoons of sour cream to taste.
If you feel like adding meat to it go ahead and prepare it and store it in the fridge too, giving the meat just a quickie in the microwave before you add it makes it a great change when you feel like it.

Try it, its one of my favorite summertime meals.
