Baked Pork Chops with Pickle Juice

pork chops, 1 per person
salt and pepper to taste
onion, 1 - 2 slices per chop
ketchup, 1 Tbs per chop
pickle juice, 1/2 cup per 4 chops

Put the chops in a baking dish that has a cover (or use aluminum foil to cover later) and sprinkle with salt and pepper. Place some onion slices on each chop, then squirt a bit of ketchup over each, then pour the pickle juice in. The recipe calls for sweet pickle juice. Then cover and bake for an hour at 350.

Pickle Juice in Potato Salad

3 or 4 mid sized Russet potatoes
4 Tbsp juice from Kosher dill pickles
3 Tbsp finely chopped dill pickles
1/4 cup chopped parsley
1/2 cup chopped red onion
2 stalks celery, chopped
1 or 2 chopped scallions
1 - 2 hard boiled eggs, chopped (optional)

1/2 cup mayonnaise
2 teaspoons dijon mustard
Kosher salt and freshly ground black pepper to taste

1 Bring a pot of water to boil. Add the potatoes (skins on). Simmer for 20 minutes. Remove from pot. Let cool enough to handle, but still warm. Remove skins. Cut potatoes into inch sized cubes.

2 Put potatoes in to a large bowl. Add the juice from the Kosher dill pickles. Add the finely chopped pickles themselves. Add parsley, onions, celery, scallions and (optional) hard boiled egg.

3 In a separate small bowl, mix mayonnaise with mustard. Add salt and pepper to taste. Mix in the dressing with the potato mixture. Again, salt and pepper to taste.

Fried Chicken Baked in Dill Pickle Juice

1 broiler-fryer chicken, cut into pieces
3/4 cup milk
1 cup all-purpose flour, seasoned to taste with black pepper and paprika
pickle juice, dill flavored
oil (for frying)
Dip pieces of chicken in milk and then into the flour mixture.
In a frying pan, cook chicken in oil to brown the crust. Drain on paper towels.
Place pieces in a (9x13 inch) pan or glass casserole dish.
Pour dill pickle juice half way up chicken.
Cover with foil and bake 350° for 1 1/2 hours, basting occasionally (Turn chicken over after 65-70 minutes and continue cooking, uncovered).
The juice will be absorbed and the chicken is great cold.
