Topic: Good tomato sauce from scratch.

Ok, here's the thing:

I've got some tomatoes growing
on my patio and they are starting
to become ripe.

Who knows how to make
some good tomato sauce
from scratch to use
in spaghetti, pizza,
etc... ?:tongue:

I have no idea how to make tomato sauce but last year my Mom canned some amazing salsa using fresh tomatoes .

Ill get it from her and get back to you . It was great stuff and it lasted all winter .

2 quarts tomatoes , peeled and chopped
1/4 cup vinegar
1 large onion , chopped
1 tspn salt
1/2 tspn garlic powder (or real finely chopped garlic cloves)
2 cups jalapeno peppers , chopped
1 tspn oregano
1/4 cup chopped cilantro
1 1/2 yspn chili powder

PREPARATION:
Mix all ingredients and let sit overnight. Thicken with tomato paste if needed. Bring to a boil. Ladle into jars. Can in pints - 20 min. in water bath canner .

(( How to peel tomatoes ))
Place a saucepan 3/4 full of water over high heat and bring to a boil . Dip tomatoes that need to be peeled in the boiling water for 1 minute. Remove tomatoes and set aside to cool enough so that you can handle them .
Gently pierce just barely the skin of the tomatoes with the tip of a sharp knife . Loosen the skin with the knife and peel away . Repeat with all the tomatoes .

4 tablespoons vegetable oil
1 large onion, chopped
1 (28 ounce) can crushed tomatoes
2 cups water
1 (6 ounce) can tomato paste
3 leaves fresh basil leaves
2 cloves garlic, crushed
1 teaspoon salt
1 teaspoon ground black pepper
1 cup sugar
2 cups red wine
1/2 cup oregano
1/2 cup romano cheeese


DIRECTIONS
In a large saucepan over medium-high heat, saute onions in the oil until golden brown. Add crushed tomatoes, water, tomato paste, basil, garlic, salt and pepper,sugar,red wine,oregano,romano cheese. Let the sauce come to a boil, lower heat to low and stir occasionally until desired thickness. Sauce is ready when oil rises to the top. Skim off oil. Garnish with Parsley
