I was told that the best wines to cook with are wines that you would drink because they have more flavor, so I have always used a wine that I would drink. I don't use wine very often in my cooking though, but when I do, I open the bottle and use what I need for the dish and then finish the rest of the bottle while I am cooking and then with the meal!!
I also like to use beer. I use it in chili and when I make bean dishes in the slow cooker.
