looking for a good casserole , tired of the same old dishes I know how to make. any body got some good ones???

I have a good one and easy!

1 lb beef
1 can enchilada sauce
1 onion
1 can corn
1 thing of sour cream
1 bag of shredded cheese
1 bag of flour tortillas

Brown meat and onion. After brown add enchilada sauce and corn. Layer in casserole dish by tortillas, mix from pot, tortillas, mix from pot. Than on top of the layers put sour cream and top it with cheese. Bake at 350 until cheese and sour cream is melted. Usually takes about 30 minutes.

Pot Pie...

1 package (16 ounces) frozen mixed
vegetables, thawed
1 cup cut-up cooked chicken add
more for meatier pot pie
2 cans (10 3/4 ounces) condensed
cream of chicken soup

1 cup baking mix (Bisquick)
1/2 cup milk
1 egg

---

1. Heat oven to 400ºF. Mix vegetables,
chicken and condensed soup in ungreased
2-quart casserole.

2. Stir Baking mix, milk and egg in bowl
with fork until well blended. Pour batter
over casserole.

3. Bake 30 minutes or until golden brown.

I NEVER have leftovers!happy

one of my favorites is corn & oysters :) It's a casserole. I know it sounds gross but it's actually VERY good. It beats the old tuna & noodles everytime :)

1 pint oysters
4 Tbsp butter
1 egg well beaten
1 can cream-style corn
1 cup cracker crumbs
3/4 cup milk
2 Tbsp melted butter
2 Tbsp flour
1/2 tsp salt

Drain and cut in half the oysters
Saute in butter until liquid is gone
Add egg and corn to oysters
Mix together remaining ingredients
Stir into oyster-corn mixture and pour into buttered casserole
Sprinkle with paprika and bake at 350° for 30 to 40 minutes

There's alot of variation to it... add and remove to your own taste. I love it though, I hope you guys enjoy it!

Another thing I love to make.... stuffed manicotti noodles.
Boil a chicken, or chicken breasts.
Boil the manicotti noodles in that chicken broth.
Mix some frozen spinach, cream of chicken, 1/2 cup milk together.
After the noodles are done, let them cool then stuff them with the spinach mixture.
Put some cheese on top, bake in the oven for 15 minutes.
It's tasty :)

Have you ever tried Sausage Casserole?

Its very simple. All you need is a couple cans of cream of mushroom soup or cream of chicken soup, a bag of noodles, sausage and cheddar cheese. Its one of those meals that's great for the winter seasons.

one my daughter's favs and easy as hell....

boneless chicken breast
cream of chicken soup
sour cream
town house crackers
butter


cube and boil the chicken (i usually add some garlic, onion, carrot and celery so i can save the chicken stock for other use) then add soup and sour cream mix together in baking dish and grind the crackers fine and spread on top, melt a stick of REAL butter and pour over and bake at 350 until bubbly...its simple and rich but way good! im sure ill think of some others guy...lol you know i hate to cook hehehe

dice up some sweet potato and red potato, onion, minced garlic, butter and saute in a pan, pour in a baking dish with cream of mushroom soup and bake...i serve this with fish or chicken or whatever really it would go with...

ive got alot of recipes but hard to write down either they are way complicated or in my head cuz i dont measure lol...im thinkin :tongue:
