Topic: Three color stew

I love to cook. One of my favorites after a hard day playing or working is Three color stew.
To start- most people have access to a variety of vegetables and root crops. When I shop I try to find 3 colors of everything.
example: potatoes come in purple, red, yellow and white. beats in nice dark purple red and yellow, 3 types of garlic, onions in purple, red, yellow and white, carrots in all 4 colors. You get it.
Next: caramelize the slower cooking root crops. that's carrots, onions, garlic, beets maybe.
rule: if it's hard to stick a fork in and sweet raw it will be better carnalized. ha ha spell checker
I like a bit of meet in it as well. 1 or 2 pieces of bacon, hamburger, small chopped ham.
chopp it small or to taste if you like chunky stew.
Once everything is lightly brown and the meat is jucy, ( the meat adds just enough salt and fat to let the veggies brown and not burn
Note: this is a recipe for the patient that like cooking. I find it best to stand and chop the next root while the previous mix caramelizes.
Then, when all this starts to smell great, add a bunch of water or leftover broth from a previous mix, throw the quick cooking stuff in like califlower, Lima beans, broccoli, spinach, etc. let it boil till a fork easily penitrates carrots and beats. ( they're the hardest)
it's ready, add spice to taste. Pepper, HOT pepper (I like), cumin, bay leaf, etc.
Ready to bring smiles to all.
