Chiles Rellenos, Chilaquilles, Entomatadas. Roasted vegetables. It's vegan night no meat.

How long did it take to cook all these?

Hi Tribu,
Hi ADD, thanks for the compliment. I was taught to cook by my Mom. In Mexican families, they like to mingle in the kitchen, while people are cooking. I hate that, we'll my mom did. So, I guess I do too! My Dad misses my mom. So to smack him out of his funk, I go full native. Lucky he thinks my cooking is similar to my Mom's. Truth is my mom's mole was wholly mole! My mom was an orphan, and raised by a woman's home in the French Quarter of Mexico. That's Puebla, Mexico. French, Spanish, Chinese and native Aztecas. So her cooking was French based. Her mole recipe has chocolate, Cinnamon and sugar. Very Euro! My Dad is scarfing down right now. I'll eat after 9. Me and my mom would eat after everybody ate. I still do that. Ciao!

I started cleaning the food at 1030. Food was done at 1pm. I usually leave it on the stove top,so it says warm. My Dad my brother and his girlfriend are eating now.

Lol, Thx BuTribu! You made me laugh! I cooked for all my girlfriends. My first real girlfriend liked Italian food, so I dropped her off a lasagne.
I've always been the cook. Not like Steven Segal. ;)

Well my mom was working in the school of women. She would pay her tuition by cooking food in the cafeteria. The workers never ate until everyone was fed. She used to tell me it gave her a good feeling. She was right! Thanks Tribu for the compliment. I made a promise to the spirit of my mother. I still love her for what she taught me as a man. Don't be afraid to cry. Help the downtrodden. Eat your veggies. Be clean. Be true to yourself. She was the greatest influence in my life. She loved my dad. So it works!

Poll is Chicken. And yes we or my Dad has a guest coming for dinner. A lady who is just a little older than me. She is my dad's girlfriend. So, I'm making Enchiladas verdes. Green enchiladas, or chicken Enchiladas topped in a cheesy sauce topped with raw onions and green chile. Tomato rice and Frijoles or refried beans. Flour tortillas or flatbread. And a nice chianti! I have tricks to cooking quick. But for what I made today, the longest time consumer, us the cleaning of the vegetables. I'm used to moving quick in the kitchen. That's why I don't like people I'm there. Once I had a get together and a friend was in there distracting me. I went to the fridge. I rose up from the bottom and headbutted my friend in the chin! True story! We laugh now. I had to take home yo the hospital for 3 stiches on his chin. Now he tells girls he got it fighting a Chinese guy!

Oh no way.. they don't even know about each other. My mom's friend is like my mom's sister or my aunt. My Dad's GF, lives in the same town. Juarez, Mexico is pretty big, about 2.5 million people. I could tell my Nina about it, but I don't want it to affect her health. Nina gets angry, ain't nobody happy. Plus she doesn't like to cross the border. Mucho racismo, she says. She likes staying in Mexico, so I visit her. She just called me with her list of stuff she needs but can't get in Mexico. She has a crazy bird. So I bring her food for that bird. It always squaks when I hug her. I tell tell the bird, don't be jealous or I'm going to make a feather duster out of you!

well the option was a salad or fries.... being the start of the weekend, I went with the fries...Mon to Fri is healthy choices when it comes to food, but hell on the weekends...open season on anything...yup, you read that right...anything goes...
You must be hungry Rob...look at the time....I ate late because my buddy showed up late...
