EASY LASAGNA

8 ounces lasagna noodles
1 pound lean ground beef
1/2 cup chopped onion
8 ounces mushrooms, optional
1 jar (about 16 ounces) spaghetti sauce, your favorite
1 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf basil, crumbled
1 1/2 cups ricotta cheese
2 cups shredded Monterey Jack cheese
3/4 cup grated Parmesan cheese

Cook lasagna noodles according to package directions; drain and set
aside. In a large skillet, brown beef, onion, and mushrooms; drain well.
Stir in spaghetti sauce, garlic powder, salt, oregano, and basil. In a
2-quart buttered baking dish (about 11x7x2-inches), layer 1/3 of the
lasagna noodles, 1/3 of the sauce and 1/3 of the ricotta cheese,
Monterey Jack cheese, and Parmesan cheeses. Repeat layers twice. Bake
lasagna for 30 minutes, or until thoroughly heated and bubbly. Let stand
for 8 to 10 minutes before cutting and serving. Serves 6 to 8.

MEXICAN LASAGNA

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) flour tortillas
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions or green onions, finely chopped

Preheat the oven to 425 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons
extra-virgin olive oil – twice around the pan. Add chicken and season
with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add
stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add
black beans and corn. Heat the mixture through, 2 to 3 minutes then
season with salt, to your taste.

Coat a shallow baking dish with remaining extra-virgin olive oil, about
1 tablespoon oil. Cut the tortillas in half or quarters to make them
easy to layer with. Build lasagna in layers of meat and beans, then
tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake
lasagna 12 to 15 minutes until cheese is brown and bubbly.

To make another kind of lasagna Follow most of Kens Barbie's recipe but instead of spaghetti sauce just use a good tomato sauce and instead of Monterey Jack cheese use Mozarella Cheese. Officially the recipe calls for Ricotta Cheese, cottage cheese and Mozarella Cheese with parmesan cheese sprinkled on top.

I guess i'm just simple.I The noodles.
Piza sause,Cottage cheese.American and chedder cheese,Add a vegtabale and beef.Layers.REAL GOOD.:smile:

Saute onions until translucent
Add some chopped garlic
Add ground beef,pork,chicken cook until browned
in seperate pan scamble 5 eggs

In seperate pan heat sauce from jar, if you want to make your own let me know I'll give you recipe for that.

In large pan put sauce on bottom, add raw noodles, then ricotta,mozzerella, meat and sauce,more noodles, top layer should be noodle, sauce and mozzerella cheese.

baked 350 for 45 mins - 1 hr. Remove from oven and let sit 15 minutes then cut and serve.

I make a pretty good lasagne myself, but have never tried the mexican recipe...sounds good bigsmile drinker
