I love pumkin crunch....but I'm looking for something a little different...like the idea of cream cheeze and or whippen cream....anything new that anyone has tried on the pumkin crunch idea??

My mom's recipe everyone liked it very. This maybe the recipe you have.



ICED PUMPKIN CRUNCH


16 oz. can pumpkin
14 oz. can of evaporated milk room tem.
1 cup of fine bakers sugar
3 large eggs beaten
1 tsp. cinnamon
1 tsp of ginger
1 tsp of cloves
1 tsp of pumpkin pie spices
1 box of yellow cake mix
1 cup of chopped walnuts
2 sticks of un-salted butter

Mix pumpkin, milk, sugar, eggs and spices together. Line a 9 x 13 inch pan with wax paper. Pour this mixture into pan.

Sprinkle with cake mix. Press chopped walnuts into mix. Melt 2 sticks butter, cool and spoon over mixture.

Bake in 350 degree oven for 35 to 40 minutes. When cake is done, turn out onto a cooling rack. After the cake is cooled place onto, a plate lined with wax paper.

Cool and frost.
Icing:

8 oz. cream cheese soften
1 tsp of cinnamon
1/2 cup of powder sugar
3/4 cup of whip cream

Mix together until creamy and spread over cake.

Thanks tazztops...this is a bit different than the usual...especially with the topping. I've been watching th food network...they are concentrating on Thanksgiving recipes. I like the traditional, but wanted desert to be a little different. I even thought of king of a pumkin parfait. Ws thinking along the lines of gingerbread, layers of something creamy and finished off with a whipped topping.
