My moms buddhist and a vegetarian, vegetarianism is pretty big in Taiwan so there's a lot of variety and the food there tends to be very clean, and healthy. My mom showed me how to make last time I saw her.

Bean sprouts, rip the end of the root off, boil very briefly and wash in cold water...helps make it crunchy

take the skin off a cucumber slice into very thin sticks about 1 in long, soak in cold water for a few minutes and drain

get soft fried tofu and heat in 250 deg oven till outside is crunchy and cut in half

combine everything, dust the top with peanut flour (finely ground peanuts) and drizzle sweet chili sauce on top (asian food market item)

Very quick to make clean and healthy.

U r very lucky and I wish my mom would be here and offer a such delicious dishes Or I would be your brother, i guess:cry:

aww my mom would love to hear a comment like that. Are you vegetarian? I'm not but I always feel better after visiting her and eating such healthy fare. Most of it is simple

like she take okra and just boils it in water and then drizzles a little soy paste over it (not soy sauce, soy paste big difference)

or steamed eggplant, dipping sauce with soy paste and mince raw garlic

She doesn't like eating out much cause she says they drown the flavor of the vegetables and ruin it with the thick sauces.

I meant with bean sprouts you throw away the end of the root and use the rest for cooking...jeez I hope nobody is eating bean sprout roots.
