Ahi is a variety of Tuna. A dark fish, it should be seared on the outside but not cooked through. If you cook it too much, it becomes rubbery and ruins the fish.

I first had it in Hawaii. It was an ahi burger. It wasn't chopped and formed. It was a fillet. It was so good! It has a beef-like texture to it when you eat it as a fillet and is a great beef substitute.

If you can't tell, I love to cook.

I like foods from all over the world. My favorite greek restaurant back home is run by a Turk and a Brazilian. Go figure. They finally changed 'greek' to mediterranian. (sp)
