      I went to an IHOP this past weekend and ordered eggs over easy. About 50% of the egg white was clear and runny, along with the yokes.
 
  All my life I have ordered "over easy" to get the whites cooked but the yoke runny but I have heard recently that what I should be ordering is "over medium". Does "over easy" mean different things in different areas? BTW, I have eaten at this IHOP occasionally for many years and "over easy" never resulted in clear whites before. I had a discussion about scrambled eggs with my friend Chef Jami about a month ago and she thinks scrambled should be fully cooked (for her and her kids anyway). I always liked them just a little wet and creamy. What is "normal" for you?  |

      I like my scrambled very dry cause I use ketchup
 
  runny is ok but never if it's clear. That's raw to me!! When fried I like it just to the point of hard but if I want to dip my toast I like it soft set and I pop it !!

     I like my scrambled very dry cause I use ketchup runny is ok but never if it's clear. That's raw to me!! When fried I like it just to the point of hard but if I want to dip my toast I like it soft set and I pop it !!   
I guess I am more flexible than some. I like scrambled creamy alone but pretty dry on an egg sandwich. But what I am hearing here is that runny whites on a fried egg is not a cooked egg! That is the way I always though it was. I think "over medium" is just the yoke cooked a little more.  |

      'Clear runny' = 'RAW'.
 
  'Scrambled' ... better if a bit creamy, but I still cook 'em until they're dry. Raw eggs are NEVER a good idea. 'Over medium' = 'solid white, runny yellow'. 'Over well' = 'solid white, solid yellow'.  |

Raw eggs were used to make mayonnaise, protein drinks, etc. When I played high school football the coach would urge us to eat raw eggs. We would just break one into a quarter glass of milk and drink it all down (you cannot taste the egg). Sometimes we would poke a little hole in one end of the egg and a pin hole in the other end of the egg and just suck the shell dry. This was kinda weird but not too bad. No one got sick.  |

      To me:
 
  Scrambled: Got to be cooked well done. Boiled: Got to be well done, to where the shell has cracked. Fried: You guessed it, Well done, to the point of being "crispy" around the edges. Yum, Yum!

      I like my white cooked & my yolk warm & runny. That way I can dip my bread or toast in it & I love them that way. I also refer to them as over easy but it's been a long time since I've gotten breakfast at a restaurant so I don't know what they call them now. But, if I asked for over easy I'd expect my whites cooked/yolks runny.
