My fave thing as a vegetarian is keeping tortillas (Gorditas and Corn)
in the fridge at all times with some refried beans, adding tomatoes,
lettuce, onions, sour cream, olives, hot sauce and cheese) and if you
want to show off for company, fry up some rice (in butter) soy sauce and
onions (green.)

‘Cooking Without Fat’ by George Mateljan has to die for vegetarian recipes. Includes some dessert and salad dressing recipes as well.

Moroccan Eggplant with Garbanzo Beans is a fav.

Orange Honey Baked Chicken was something TheKid would inhale.

I highly recommend the cookbook.

Thank you all, these are all fantastic suggestions. Can't wait to them and, Storm, I will get the cookbook.

Made my first veggie chili last night, best I've ever had, I'm hooked.

Need to stop reading your recipes, now I'm hungry.
