I like to pound it out to tenderize and also let more seasoning get in, let it sit awhile in a little milk, then coat with seasoned flower and fry. Make gravy with what's left in pan. Like to put Tabasco sauce or some other hot sauce on it. Come to think of it I like hot sauce on most everything !

Try soaking in buttermilk or heavy cream. ..it breaks down the enzymes n makes excellent gravy. Soak it 24 hrs. Can also dust meat in mixture of Mesa Herina flour or cornstarch. If you want to bread with a crisp crust ..AFTER DIPPING meat or poultry in wet liquid...use Crushed fine Tostito Brand Cantina style tortilla chips. Oh my . Those tiny crushed broken chips left in a bag. Cush them up place in zip lock bag n freeze them. Use as breading. No extra salt needed.

People try to pretend to someone they are not to please the other. To have great relationship. 1st one must truly want a relationship , starting with being friends. This includes honesty, trust, respect lots of open communication. One realizing no one is perfect and be willing to compromise. Work out issues and it's work. Calling each other names or abusive actions is not good. Most are afraid of rejection

Fresh Homemade Stuffed Jalapeño Burgers
Using a large bowl add ~
Using gr chicken pork n beef mixed together. ratio Chicken n pork = 1 lb. Each to 1/3 lb beef all high quality n lean
Can make ahead n freeze these.

ADD a little Mexican Crema or sour cream to meat it makes so good not much

2 squirts of lime juice

6 to 7 roasted gr. chilies - fresh - chop. I roast a lot of chiles n freeze them - using them in many other recipes * Make my own gr. chile sauce n freeze it also.

kosher salt - little garlic granular - black pepper - mix well form patties to size U like. Sometimes ai add a little McCormick Habanero Mango Seasoning. CAN ADD dice very fine onion or onion granular Sometimes I do n dont not a lot either way.

POKE a well in UR burgers add cream cheese n close burger well on all sides forming the burger again. HAVE use Harvatti cream jalapeño cheese Mexican Blend cheese UR choice.

Remember chicken cooks faster.

NO EGGS ever if need be wet hands to form burgers .

These BURGERS have never been dry

* use a flat cast iron skillet to roast chiles or on a grill. Speed up roastime ~ after chiles start to char n blister n sometimes all dont char completely. usually just place in plastic bag to sweat them before peeling ...I just cut that step n place unfinished charred chiles in micro for about 1.5 minutes n they peel great n still have the char roasted flavor n make roast enough to wrap in pkgs. n freeze then in zip lock bags wrapped in saran separate portion sizes .

I like using a round flat cast iron skillet for quesadillas n many other things. Roasting gr. chiles or (Anaheim's or any chiles - tomatoes - onions - garlic- making anything on it ..keeps even heat n great for cheese crisps - grilled sandwiches - fajitas. LASTS FOR EVER.

Quesadilla OR Cheese Crisp with
Shredded meat or poultry ñ shredded cheese. SO EASY ñ delicious. MUCH cheaper than going out ñ U actually know what is in the shredded meat no hidden sugar or extra salt. I love cooking Mexican food. MAKING my own gr. chile sauce or red enchilada sauce. Salsa - guacamole or pico de gallo. So much cheaper n outstanding taste.
Adding arrowroot to thicken is a trick for less calories but - sometimes doesn't take place of Mesa Herina or flour in some dishes.

MAKING UR OWN
Shredded chicken or beef is really easy n can always freeze it for other uses. FREEZE Chile peppers after roasting or not roasted I wrap mine in saran wrap in portions I use n freeze in zip lock bags
