...significant other. It's a dinner that this person spent all day preparing especially for you, hoping that you'll be delighted. Unfortunately, the aroma and taste are enough to make a maggot vomit.
How would you handle this situation?

Wouldn't complain and would cook my own dinner instead of complaining about someone that tried.

OH God this happened to me a few years a back not with a S/O but with a child that worked all day to make this meal the same way I did. I grinned and took a couple of bites.. I honestly tried to finish I just couldn't and later that night I was paying homage to the porcelian throne. LOL..
Now I will tell the truth.

Been there but fortunately it was not the worst cooking I ever experienced.

I have had food SO bad one bite (not swallowed mind you) left a bad taste in my mouth for three days. I also was not the only one at the table and it was a room mates spun out and crazy GF who did the cooking. Needless to say she was promptly banned from the kitchen!

I flatly tell people who can't cook to get a frikken cook book and READ THE DAMN DIRECTIONS!

Other than when I lived with an Executive Chef (for 10yrs...no complaints), it's never been an issue...the kitchen is my domain...but you're welcome to do the dishes...

Oh no that is a hard one. I would prefer that he tell me he doesn't like it, so I don't do it again but I would hope he would be delicate with the information.

First pray for the correct words. Then be very tactful in my response. Would also pay close attention to how they were reacting. Hopefully it could turn into a moment of comic relief. Would show my appreciation for their efforts in some form.

I spent 9 years eating army chow. It's not THAT bad. When you consider that the cooks have to cook one thing for 300-500 people, it's actually amazing. The only things that aren't mass cooked are the burgers, and the eggs (sometimes).

I lived with a woman that burned, or over-spiced everything. When I didn't cook, we ate out.
