that's me cooking when i'm in a hurry. i still cook. hell, even the tofu stir-fry i posted about previously is still a quickfix. if it takes less than 15 minutes to make, then i consider it a quickfix. i need to EAT!! hell, i've lost so much weight now it's ridiculous. i used to weigh 185, now i'm just under 160. i hopped on the scale one day and it read 158. WTF?!?!? that's like 27 pounds i've lost!! it has to stop! but yeah, anyway, so that tuna quesadilla is good eating. hahaha, i may still fix one for meself tonite. never know. ... well, actually, cos i can't find my saute pan anymore. grrrr... but whatever.

One of my fall favorites is

Sweet and Sassy Casserole

Brown a small package of maple flavored sausage links in a deep sauce pan or 1.5 qt. corning dish. Set links on a paper towel and pour out the cooking fat but don't wipe out the crackleings. Add a can of apple pie filling and a can drained sweet potatoes. Arrange links on top cover and simmer on low heat until bubbly. Serve with pineapple or a iceberg salad.

I thought this was supposed to be 'in a hurry'? Can't beat a bag of chips! Or PB+J. Got a couple of food groups in that one for the health concious!

Me too.

A little bit different and easier to carry. I use a tortilla, slap a little PB&J on it, add bannana, walnuts, raisins, whatever. Easier to eat in the car.
