Topic: cooking for one

So I've cleaned out my cabinets, fridge and freezer and save for a few bottles of alcohol and essential condiments I'm basically running on empty. I find cooking for one to be frustrating, it's much easier to put forth effort when you are cooking for someone you love (or at least like). So, before I go shopping to stalk up the reserves again, I'm hoping some of you will share your secrets for making pleasant meals for one, and tips for keeping the effort to a minimum without sacrificing taste.

I only know how to cook for a family of four to have seconds. I make things and package them up for the rest of the week. I also found that the mini george forman grill is fantastic. It cooks FAST. So when I want to make a single chicken breast, or fish filet, or burger, it is fast and easy.

I'm with you on this one - it's hard. I don't like leftovers so I end up wasting. frustrated

PBJ, fruit, Taco Bell, salad, beans, burrito's are an easy meal with little or no leftovers......ohwell

OH! The GF Grill is a must!

It never fails, whenever my daughter is eating over at a friends house, I always rely on my bowl of cereal.


But seriously, you might want to invest in a FoodSaver. You can prepare meals, divide them into maybe one or two servings, and freeze them for a very long time.

It's just me and my daughter and I have one and it not only saves on money and time, but also prevents from having unwanted leftovers as well.

AMEN! I don't even own a microwave! I try to save leftovers but I almost never eat them, and then I feel like a jerk throwing away food. I try to package food individually before I freeze it, I've mastered individually packaged lasagna, chicken casserole...seems like meat only comes packaged for 8 these days so I marinate chicken in the bag I freeze it in (which works wonderfully for grilling btw) but pastas are a lost cause because I will never eat it all...veggies go bad because I get sick of eating the same thing...seems like I spend more time cooking than eating. grumble

Yeah, I eat alot of cheerios or special K.......tv dinners are tolerable as well.

I make a pretty decent penne with sausage and asiago cheese sauce. I buy the Italian sausages that are in the casings, so I can just use one or two when I need them. Cook up however much pasta you want, brown and drain the sausage, add half and half and the asiago cheese for the sauce. Voila!
