Guacamole


2 avocados
sour cream (light)
medium salsa
fresh limes
garlic powder
paprika
salt
white pepper

Mix in food processor, peeled pitted avocados, (save one pit) 1/2 jar salsa, and half a regular sized container sour cream. Add juice of one lime and rub the peel on the pit, place the pit in serving dish. Add spices to taste.
The pit and lime juice will keep the guacamole from turning. The trick is to use almost equal parts avocado, sour cream, and salsa. I like to use the lime flavored chips as well....

And make sure the avocados are black and quite soft, so they are ripened enough to peel with your fingers.


I've always wanted to make my own....I will try this!! Luvs me some Guacamole!

CHICKEN ENCHILADA VERDE

4 boneless skinless chicken breasts
2 cans of chicken broth
1 15 oz can of green Chile sauce
1 8 oz can of green Chile sauce
1 small can of diced green chilies (drained)
¾ cup of salsa Verde
2 cup of shredded Monterey jack cheese
1 cup of shredded pepper jack cheese
1 cup shredded of sharp cheddar cheese
1 cup diced red onions
salt and white pepper to taste
12 large flour tortillas
1 cup of sour cream
1 15 oz can of black olives diced

Preheat oven 350 degrees.
Trim off any excess fat or skin off of chicken breasts. Wash thoroughly and place chicken in a deep pan with chicken broth and water. Add salt and pepper. Bring to a boil then down to a simmer. Cover with lid and let cook till chicken is easy to shred with fork.
Strain the broth, place in a container in the frig or freeze.
Shred chicken with fork and set aside. Combine all cheeses and onion in a small bowl.
Open small can of green Chile sauce and pour on bottom of glass baking dish. Fill each tortilla with shredded chicken, diced green chilies, cheeses, onion, and top with 1 tables of green Chile sauce. Reserve half the cheese and onion combination.
Roll tortillas and place in baking dish seam side down. Take remaining green chili sauce and thoroughly pour over all. Top with remaining cheeses, onion. Add the salsa Veda, and black olives.
Bake in 350 degree oven for 20-25 min or until heated through and cheese has melted. Let stand 5 minutes. Top with sour cream or your favorite hot sauce.
Note: If needed you may have to grate more cheese depending on how much cheese you like.

Brandy's New York Style Cheesecake
Crust
1 Cup Grahm Cracker Crumbs (About 1 1/2 packages)
3 tablespoons sugar
2 1/2 Tablespoons butter
Filling
3 Packages Cream Cheese
1 Cup Sugar
1 Teaspoon Vanilla Extract
1 Tablespoon All-Purpose Flour
4 Eggs
2 Egg Yolks
1/2 Cup Sour Cream
Preheat oven to 375 degrees .
Spray the bottom of a 9-inch spring form pan w/PAM . In a mixing bowl, combine grahm cracker crumbs, butter and sugar . Mix well . Press into bottom of spring form pan and bake until golden (10 minutes). Set aside and let the crust cool completely .

Increase oven temp to 400 degrees .
In a large mixing bowl combine cream cheese , sugar , vanilla and sour cream with an electric mixer beat until light and creamy . Add the flour , then the eggs and yolks one at a time . Mix until smooth . (Be careful not to over mix.)Butter the sides of pan and pour mixture over crust . Shake cake to smooth out and get out air bubbles . Bake for 10 minutes on 400 degrees . Reduce the oven temp to 200 degrees and bake for an aditional 45 minutes . Remove cake from oven and allow to cool completely . Refrigerate cake for atleast 5 hours (Overnight if possible) before serving .

Serve with topping of choice .(Strawberry sauce , blueberry pie filling , pineapples , cherry pie filling)
To prevent cracking you may wish to cook cheese cake in a water bath .

Broccoli Salad
1-2 Large Heads of Broccoli
8 Slices Cooked Bacon(Crumbled)
5 Green Onions (Diced)
1/2 Cup Raisins
1 Cup Mayo
2 Tablespoons Apple Cider Vinegar
1/4 Cup Sugar

Cut heads of Broccoli into bite size pieces , add crumbled bacon , onion and raisins .
In a seperate bowl mix Mayo , vinegar and sugar .
Pour over salad and toss well . Refrigerate for serveral hours before serving .

Veggie Roll-Ups
6 Packages Cream Cheese (At room temperature.)
1/2 Cup carrots (finely shredded)
1 Cup Chopped Broccoli
1/2 Red Onion (Diced)
1 Package Powder Ranch Dressing Mix
1 Jar Real Bacon Bits
1 Package Large flour tortillas

Combine veggies , Ranch Dressing mix , Bacon bits and cream cheese .
Spread the mixture thinly on flour tortillas and roll jelly roll style . Cut into 1/2 inch slices . Serve .

Tip:(Place rolls in freezer for 15 minutes before slicing and they will be much easier to slice.)

Pesto Rigatoni w/ Smoked Sausage

1 pkg rigatoni (cooked per pkg directions)
3 tbs butter
1/4 cup onions
1 tsp minced garlic
1/4 cup green peppers
1 cup + sliced fresh mushrooms
1/2 jar of pesto
1 can cream of mushroom soup
1/4 cup milk
2 cups italian or grated parm cheese
1 pkg smoked sausage
GARLIC BREAD - well, you have to have garlic bread


- cook rigatoni per pkg directions
- saute' butter, onions, garlic, peppers and mushrooms
- stir in pesto, cr of mushrrom soup, and milk
- heat smoked saugage in microwave (I put the slices in water)
- drain sausages
- add sausages and cheese
- drain rigatoni and put back in pan
- add sauce to rigatoni, mix well

mix veggie and olive oil in a pan and set to warm

in a ziplock bag put about 3 cups of flour
for seasonings use cajun, garlic powder, seasoned salt, bread crumbs, and corn meal. dredge the chops through 3 beaten eggs


place in the ziplock bag and shake well,,

fry until golden brown.

2 cans cream potato soup
3 cans New England Clam Chowder
2 cans minced clams, drained
2 pints of half & half
3/4 stick of oleo.

Place all ingrediants in crockpot and cook on low for 6 hours.

Ok... I don't always cook from a recipe... but this is kinda my recipe for my 'absolutely bad for you cheesey potatoes'


1 bag of frozen diced potatoes
1 bag of frozen o'brien potatoes
(has peppers and onions in it)
2 cans of cream of mushroom soup
At least 1 lb shredded cheddar cheese (preferable sharp)
splash of milk
salt and pepper to taste (but I don't add it)

Place all ingredients into a baking pan or glass cassorole dish. Bake covered at around 400 degrees for about 40 minutes. Bake uncovered at 400 degrees until cheese is golden brown. :wink:


My sister makes this but she adds sour cream flowerforyou

The favorite in my house is my taco casserole. Every one in my family loves it. It so much easier to make this then deal with the mess of tacos and the refried beans helps to stretch it further.


1 lb ground beef
1 cup of onions
1 can of refried beans
1 can of green chilies (optional)
1 package of soft taco dinner (any brand will do)
1 cup of cheddar cheese
any toppings you like on tacos

Brown ground beef and onions. Drain. Mix beef and taco seasoning mix according to package directions. Add the refried beans and green chilies. In a 9x11 pan, put a layer of tortillas on the bottom. You'll have to tear them to cover the bottom. Add enough beef mixture to cover. Repeat two more times with the tortillas and beef mixture. Top with cheddar cheese. Bake in a 350 degree oven for about 15 to 20 minutes. Cut into squares and top with lettuce, tomato, sour cream, or any other toppings you like on your tacos. Enjoy!

crepes

1 large egg
1/4 c sugar
1 1/2 c flour
approx 1 1/2 c milk

beat egg with sugar,
add about half the milk
and all the flour

beat with a hand wisk
until batter is smooth
using only half the milk
at first prevents lumps
once batter is smooth,
mix in remaining milk
until the batter is very
thin - it should be
very liquid

ladle batter into a large
skillet preheated to medium
with a pat of butter.
swirl to coat the skillet
a large nonstick one works
great. cook until all the
batter is dried watch for
edges to brown. carefully
lift an edge and flip for
30 secs or so and voila!

serve with your favorite
fruit, or sugar and butter,
or chocolate, or whatever
you like.

for dinner crepes omit the
sugar and serve with your
favorite sauce or stewed filling.

It's simple and easy and oh so yummy in cold weather.

1 lb ground beef browned.
Then add water to about half full.
4 sliced potatoes
one sliced carrot
some diced onion
some salt and lots of pepper.

It's my family's version of beef stew. But it is a broth soup instead of a thick stew.



Another one is Oyster Stew.

two containers oysters.
Dump in the pot.
take one container and fill half way with water
pour back and forth between containers to clean out all the juices and pour in the pot.
Add some butter, a little salt and pepper and slowly warm.
Then fill the pot with milk. Add a good amount of butter.
A little salt and lots of pepper.

Top with lots of oyster crackers.

Nana's Country Fried Steak

2 med to large sirloin steaks
1 cup flour
1 sliced onion
1 sliced green pepper
aboout 3 cups fresh mushrooms
2 tblsp butter or marg.
1 large can of Redpack tomato sauce (or what ever brand you prefer)
salt,pepper

Cut up steak into 4 smaller pieces, pound both sides of each piece in flour on a flat surface, not to thin (enough to tenderize well) . Brown each piece in 2 tablespoons butter or margarine in frying pan. Remove from frying pan into large sauce pan. Dump tomatoe sauce over steak and add onions, peppers , mushrooms, salt and pepper to your preference.Simmer covered on low , gently mixing and stirring occasionly.Simmer until vegetables are tender.

Is great over rice or egg noodles served with warm rolls or french bread.
