This is the recipe people request most from me, other than my Chicken Cattatore & Lasange, but they aren't written anywhere.

Pig Pickin Cake

Cake-prepare a box of yellow cake mix as directed, but replace the water with a can of Manderine oranges, including the juice.

Topping-mix a 12 oz container of Cool Whip, a large package ofinstant vanilla pudding & a can of crushed pineapple with the juice.

It does not keep well, I only make it when I have enough people to ensure it will all be eaten. It's very light & refreshing, great for a BBQ on a hot day, but it does not travel well & needs to be refriderated.

So I made the Guac.......it was very tasty. The only problem was it was kind of brown looking when I got done. I think I didn't use the fresh salsa and should have. Used the jar kind. The avocados were not brown btw.
Thanks for the recipe, it tasted great!

A spritz of lemon or lime will keep the avocados from turning brown

I'm fixin to give ya'll the secret to really good fried chicken. This is a secret so don't share it with anyone!!
Ya gonna need chicken pieces, buttermilk, flour and spices. Ya can use whatever spices you prefer. Personally I use some garlic powder, season salt, onion powder, and chicken seasoning. Ya put your seasonings into the flour and mix 'em up real good. Set that to the side. Trim any excess fat off the chicken. Put buttermilk in a bowl. Dip the chicken into the buttermilk and then into the flour. Place on a platter. When done place in the fridge for an hour. After an hour remove and redip in the flour. Place in hot oil. Keep the chicken from touchin. Turn chicken pieces over every few so that it's evenly browned. Fry until done. ENJOY!!!
