Well Minglers, how did your day go today? Mine went great so I decided I had plenty of time to cook up an Italian dinner for everyone! Mama Mia! On the menu tonight are Baked Lasagna, Zucchini and Purple Onion Casserole, Garlic Bread, and your choice of Red or White Wine. Hope you enjoy ladies and gents!

I love zucchini! I made have some zucchini crust pizzas before. They were amazing. I have also made some zucchini cakes (more on the line of potato pancakes) those are awesome as well.

Paper plates work for me! And, feel free to order in sometimes.... we have the budget! My day was busy but good. I actually had a clear schedule so I didn't have to drive today in the snow. I got a lot of paperwork and organizing done in the office! You can actually see my desk!
