Topic: Winter Soup

Ok, I was kind of just thinking of a standard hot broth based soup...
I forget what "the trilogy" is. Carrots, onions...potatoes?

..but certainly open for suggestions???
Favorite winter soup/stew???

Sheen bone broth ..Beef is my choice
but I can also like to use lamb shanks.

PS:..I do Love the marrow of the bone :wink:

i prefer the thicker stews usually beef
with potatoes carrots and peas

Potatoes, carrots, beef, beef broth, spices, heck.. Just about whatever you like.. You can always thicken it to liking by adding in flour a little at a time until you get it how you like..

I like it fairly thick, but not stew thick.. For soup.. Stew.. Yes, thicker the better..

Hamburger Soup

Fry a packet of ground beef. Cook it as a chunk of meat, covered. Once a side is browned, cut it into inch, inch and a hlaf chunks and flip it...brown the other side (should be cooked thru).
Drain the ground beef and set it aside.

In a zip lock baggie place 3/4 to one inch chunks of
Sweet onion
Sweet red pepper
Celery (peeled and halved)
Carrots (peeled and halved in the center) or baby carrots
add some malt or balsamic vinegar
Some olive oil, a bit of brown sugar (not a lot), some honey.
Italian seasoning, garlic and onion powder and some crushed black peppercorns.
Mix it all up and let it set while the ground beef cooks.

Spray the crock pot with cooking spray (I use olive oil spray)
Put 1 can of drained string beans (cut, french green or wax, I like waxed beans)
Put 1 can of drained white corn
Put 1 can of drained whole 'new' potatoes.
Turn on the crock pot.

Add beef broth (bout a half a cup right now).
Place the ground beef into the crock pot and turn into the mixture so it covers (try not to break the large chunks).

In the frying pan melt butter or add some olive oil.
Empty the bag of veggies into it and fry at high heat till they being to soften (about 5 mins) while moving them around.
Drain and put the veggies in the crock pot.
Turn the veggies into the mixture, again being careful to keep the meat chunks intact as much as possible.

Add more beef broth till everything is covered.
You can use water if you run out of broth.
Let it crock cook all day.

Variations

Add red pepper flakes and seasonings to the ground beef while it is cooking.
Add hot peppers to the veggie bag before marinating.
Add hot sauce to the soup when you set it.
Add cheese to the soup in the bowl.

Myself I always cook a roast first eat it a few days then throw that and extra stuff in a crock pot to make stew...

Once in a crock pot I add more potatoes, corn, peas,green beans and can of rotel to it for some spice..... makes a great stew~~~

Stew meat, carrots, potatoes, onions, cabbage,diced tomatoes, season mix.
All in Crock-Pot. 2 hrs

Top off with Corn bread on side. :smile:
